Recipe For Lentil Soup

This recipe for soup was a long time coming! I have made some mediocre lentil soups over the years, which have never seen the light of day on this website.

Without a proper lentil soup, though no vegetarian food blog would be full, so I perfected one of my own.

It's here. My lentil soup is made with mostly pantry ingredients, but for a vivid, fresh taste, it includes hearty greens and a squeeze of lemon. 

It's flavored with some of my favorite spices and plenty of black pepper that's freshly ground. Honestly, it's the best soup I've ever had with lentils.

Ingredients For Lentil Soup:

  • •         1 tablespoon olive oil 
  • •         1 onion, chopped 
  • •         2 cloves garlic, minced 
  • •         2 cups water 
  • •         4 cup low-sodium chicken broth 
  • •         1 cup dry brown lentils 
  • •         Pepper to taste 
  • •         1 ½ teaspoons dried Italian seasoning 
  • •         6 oz. tomato paste (unsalted) 
  • •         14 oz. canned diced tomatoes (unsalted) 
  • •         2 oz. whole-grain elbow macaroni 
  • •         1 cup frozen carrot cubes 
  • •         1 cup frozen peas 
  • •         ¼ cup Parmesan cheese, grated 

Instructions For Lentil Soup:

1. Pour the oil into a pan over medium heat.

2. Cook the onion and garlic for 5 minutes.

3. Pour in the water and broth.

4. Add the lentils.

5. Season with the pepper and Italian seasoning.

6. Bring to a boil.

7. Reduce heat and simmer for 30 minutes.

8. Stir in the tomato paste, tomatoes, elbow macaroni, carrots and peas.

9. Increase heat to boil.

10. Reduce heat and simmer for 10 minutes.

11. Sprinkle the Parmesan cheese on top before serving.
